Cookie Swap - A Romance Writers Weekly Post

'Tis the season for Christmas cookies! Today, the writers of Romance Writers Weekly are participating in a cookie swap. Hopefully, you've followed me here from Jo Richardson's site. If not, please check out her recipe.

 

 

Every Christmas, my family makes dozens of types of cookies. One of my favorites is my grandmom's Pizzelle recipe. Every Italian lady I know has her own recipe for these cookies, my mom, aunts, and cousins included. (I don't - I stick with Grandmom's). Today, I'm thinking of her and wishing she were here, so let's whip up a batch!

 

Grandmom's Pizzelles 

 

Ingredients

12 eggs

2 cups oil

2 cups sugar

4 cups flour

1/2 tsp baking powder

4 tbsp anise seeds

Anise oil, as needed

 

Note: you will need a pizzelle iron for this recipe.

In a large bowl, combine the eggs, sugar and oil and mix until well combined. Add the flour, baking powder, anise seeds, anise oil, and mix well to form an evenly mixed batter. Set aside at room temperature for 30 minutes.

Heat the pizzelle iron until very hot. Pour 2 tablespoons of batter onto the iron and close it. Cook until golden brown, about 2 minutes. (Grandmom would sing an Italian song instead. When she finished, she knew it was time to remove the pizzelles.) Repeat until all the batter is used.
